Michael Heim is a lifelong mushroom enthusiast and community educator whose work spans wild foraging, organic cultivation, fungal genetics, and nonprofit outreach. He first discovered his love for fungi during a morel hunt in 2008, a moment that launched a deep and evolving relationship with the fungal world. A former restaurant industry veteran, Michael went on to found Ensō Farm and Forage in 2015, leading seasonal wild mushroom forays and cultivating public interest in mycology across Colorado. He is a longtime leader within the Colorado Mycological Society and one of a small group certified by the CDPHE as a Wild Mushroom Expert, authorized to legally sell wild-foraged mushrooms to chefs and markets statewide.
In 2021, he co-founded Mycolove Farm, a USDA-certified organic mushroom farm where he now serves as Chief Operating Officer. He leads operations with a focus on novel genetics, strain development, and regenerative growing practices. Michael bridges traditional foraging knowledge with modern cultivation and extraction techniques. His professional work includes cloning and developing wild mushroom strains, consulting on agro-ecological initiatives, and exploring the intersection of fungi with food systems, medicine, and environmental sustainability.
Michael is also a co-founder of Mycoreach, a nonprofit dedicated to mycological education, outreach, and equitable access to the benefits of fungi. Whether guiding culinary tours, advancing mushroom biodiversity, or building educational platforms for the next generation, Michael’s work reflects a holistic, grounded commitment to fungi as a force for nourishment, healing, and community transformation.
